How do pathogens enter the food chain?

Remember that we live in a world surrounded by microorganisms, most of which are harmless to us. We cannot eliminate them from the world, so we have to try to prevent them from entering the food supply.
      The inspection process in the slaughter-houses are one initial line of defense, but that is not the most important area for prevention.
