Harmful pathogens are brought into the kitchenby
raw meat and even fresh fruits and vegetables, for example.
In some parts of the world, human feces
are highly prized because of their high nitrogen content. Called "night
soil," they are used for fertilizing crops. Pathogens in the soil
are carried on to the vegetables. During harvesting and packing,
these
contaminated foods will come into contact with all kinds of surfaces
and some of the microbes will be transferred to those surfaces. The
contaminated
vegetables will be handled several times before they are thoroughly washed,
and that contact with hands, gloves and/or aprons, etc. may transfer
the contamination.
